Prosperity. Health. Auspiciousness. These are common words we wish to each other come the new year.
For the Chinese, especially in Hong Kong and Southern China, dried oysters are popularly eaten during Chinese New Year. This is because the dried oyster is called “hou see” which sounds like the word for good fortune, good deeds or prosperity in Cantonese.
Like other dried seafood such as dried shrimp and dried ikan bilis, the dried oyster adds body and flavour to dishes, turning them from good to memorably great. Try adding a few in any Chinese soup, such as lotus root soup, old cucumber soup, beet roots soup, these wonderful Asian delicacy would doubtlessly add zest to the flavour.
